apple pie recipe

Since I liked this pie a lot I'll share the recipe with you! It's a small pie plate and the recipe is for 6 portions.
No sugar, no gluten, no animal products. Enjoy!
Pie crust:
150g natural unsalted cashews
100 - 110g dried figs
1/2 teaspoon bourbon vanilla powder,
2/3 tablespoon cinnamon
1 pinch of seasalt
1-2 tablespoons of water if needed.
Mix all the ingredients for the pie crust in a food processor until the dough gets sticky, add more water if needed. Press out the dough evenly on your pie plate, use your fingers!
Pie filling:
2 - 2,5 small apples (mine where homegrown)
3/4 deciliters of almondbutter, or peanutbutter, or a mix of both!
0,5 deciliters of coconut oil
1,5 teaspoons of cardemom
Chop the apples into small squares, around 1x1cm. Carefully melt all the ingredients, but the apples, in a pan on your stove. When melted, add the apples and mix, let it stay on the stove for 10 minutes or so. It should not be hot, preferably under 42 degrees celcius. Check with your finger if you're uncertain. Pour the pie filling on your pie crust and place in your fridge for 1 hour. Done! Eat within 5 days!
