friday's easter dinner
Images from the little Easter dinner my family had with my cousin Teresia and her family last friday. Today it's my mom's 60th birthday! Happy birthday to you! We've (my family) been celebrating her all day long with activites in Stockholm. At the moment we're in my apartment, drinking some Prosecco and eating strawberries before heading out to the restaurant!

Easter brunch with my bae Julia! Coconut milk chia pudding, mango and banana nice cream, almonds, goji berries, tahini paste, granola, coconut flakes, cacao and coffee. This was soooo good and exactly what I needed! Love that girl! On my way to Öland for som Easter celebration with my family! Happy Easter!
chia seed sorbet
When I feel for something sweet or comforting but don't want to go all sugery sweet or fatty greesy, I'll just make my own chia seed sorbet! It's easy! You just mix frozen berries, of choice, like 2 deciliters, 1 tablespoon of chia seeds and 1/2 deciliter of water in a food processor! Voila! Top with what you like!
munching nam nam
Been doing lots of yoga today, two sessions, 1 half hour and 1 one hour sessions. Lovely, a little tired in my muscles now! Anyhow, Johanna came by during lunchtime today. I helped her to get ready for a wedding. Her hair is so beautiful so I wasn't worried at all! She got some hollywood curls! After that I've been taking it easy and among other things munching on this bowl of banana ice cream!
When this is your dinner on a sunny evening your happy! Banana "ice cream" with loads of toppings!

food bonanza in växjö
Terrible colours.... I didn't have a grey-card available nor good lighting, so these colour adjustment had to do! Anyway, FOOOOOOD BONANZA! So much good stuff on this table I'll tell you! Among everything else there's purple, white and orange sweet potato! The purple sweet potato was really yummy! All vegan of course, so the "meaty-looking" stuff is Oumph/Soy meat :)

wok me up
Cooked this spicy wok with fried temphe and peanut butter sauce yesterday for my family! It was appreciated and delicious as well. I'm soon headed to the train that will take me to Stockholm. At the moment it's snowing like hell outside here in Växjö... I hope there is no problem with the train because of that.... you never know with SJ....
So this is the best vegan sushi I know, you'll find it at Moshi Moshi in Växjö! Look at that extra ginger, haha we ate it all.... both mom and I are a bit crazy about ginger, and the ginger at Moshi Moshi is so tasty! If you ever visist Växjö you should for sure visist this restaurant and order Vegan sushi! ;).
Today I've been to the dentist, they basically take som pictures, says it looks good and charge 900sek... it's good that I only need to visit the dentist each and every year, AND that my teeth are in such good shape too! Anyhow, dad joined me for lunch at Condeco a while after my visit at the dentist and now I'm home. At the moment I'm sitting in the sofa in front of Housewives on channel 3... oh I missed that hahahaha...

Images from a dinner at The Gate Islington in London. Look at that vegan almond milk mocca coffee compared to the espresso beside it.... HUGE AND SO GOOD! That very night I had a lovely thai coconut curry and a banana dessert, all vegan and super delicious!I had to leave a bit of that dessert though, so full stomach! However, tonight I'm staying home, I felt like drawing and illustrate some!
I kinda forgot to show you guys a lot of images from Christmas. So why not do it several weeks later? Better late than never right? I thought so! Anyway, this Christmas was so cozy, with lovely vegan food... all homemade. It was just mom, dad, my big brother, the cat and me. Perfect. Oh yeah, I made the table setting. Pretty much out of nothing... only from what I could find during a tour in the house! The tiny gnomes (or what you call them...) is small bottles and the hat is a screw cap so it's actually snaps/alcohol in them! Funny and clever huh?! A friend to our family makes them!

Throw back to a yummy starter from last year! It's an oven baked pear! I'm still at the studio editing and printing images. I'm listening to "Morgonpasset i P3" and drinking my last cup off coffee of the day! That first and last cup of coffee under a day is really the best ones!
new years dinner
So I made an avocado appetizer with a creme of mayonnaise and creme fraiche with chopped red onion. On top there's seaweed caviar, chive and a slice of lime. As main course I made a asparagus and jerusalem artichoke risotto! The dessert I forgot to shoot haha, but it was a rawfood sorbet of banana and vanilla with chocolate sauce, chia seeds and coconut chips! All vegan ingredients of course!
No prep needed for this! Easily made when you have your guests in the kitchen :)
a vegan christmas table
Since it's so "boring" to be vegan during Christmas I have to say I've never eaten so good r*bs, s*lmon or h*m in my entire life (I've never liked ham to begin with, but ribs mhmmmm). Everything besides the m**tballs, ch**se and butter are homemade by me and my mom. So on my Christmas table there was two types of r*bs, scrambled tofu, oat-cream'ed kale, marinated carrot with mustard sauce, breaded turnip, brussels sprouts, A&A's Göttbullar, two types of aubergine h*rring: tomato and mango, bread and crispbread, peas, red cabbage, beetroot salad and a raw green salad. Can't complain!
Last year I made four different types of aubergine herring. This year I'll just make my favourites, Mango and Tomato! Mango is my absolute favourite! Would any of you guys care for the Mango Herring recipe? Today's my last day of work in the Studio before I head home to Växjö for the Christmas Holidays. I just have 4 days off though, but it's going to be marvelous! I haven't had two days off in a row for such a long time now! My body is craving it and I'm longing for my family!
It's just a week left before I travel to Växjö and my parents to celebrate Christmas! I'm so excited about eating vegan christmas candy and food. I've been longing for that. Also so happy to hang out with my best gal Julia who's in Växjö during the Christmas Holidays too! I miss you girl!! The images above is of the vegan candy I made for Christmas last year, we did not eat upp all of that haha... I think we still might have a few of these left in the freezer. Due to all of the sugar (and that we kept the candy in the freezer) it still taste good haha!
Made this seed bread yesterday. Really easy to make, only natural ingredients too, gluten free and vegan :). Texture and taste is sublime!

vegan gingerbread cookies
Gingerbread cookies with no sugar (only dates and agave syrup)! Just natural ingredients (besides the tiny amount of bakingsoda) whole wheat spelt flour too... curious for the recepie?! These gingerbread cookies is full of flavour and so yummy! It's not an ordinary recepie, but easy to make and fun to eat! Vegan too of course!
